De-alcoholisation is the process of removing all of the alcohol from a wine with great care. All the alcohol is removed after going through a spinning cone technique.
The spinning cone technique uses thin fill evaporation technology and a vacuum process which removes a little of the aroma and alcohol at low temperatures.
During the vacuum distillation, the alcohol starts to evaporate and is removed. In this process, the aromas in the wine are volatilised, making the wine less aromatic. After this, the essence from the first pass is added back to the de-alcoholised wine.
This means that little of the floral aromas gets lost or evaporates in the process giving you all the flavour without the restriction of alcohol.
